Ingredients:
1 clove of garlic, halved
3/4 cup dry white wine
1 tbs fresh lemon juice
10 oz emmentaler cheese, grated
10 oz gruyere cheese, grated
1 1/2 Tbs. cornstarch
2 Tbs. cherry brandy (Kirsch)
1/2 Tsp. dry mustard
pinch fresh ground nutmeg
pinch paprika
1 loaf of french bread cubed
Insructions:
In a bowl toss the cheese and cornstarch so the cheese is evenly coated.
Rub the inside of the fondue pot with the garlic halves, then discard. Pour the the wine and lemon juice in the fondue pot on medium heat and bring to a simmer. Add the cornstarch coated cheeses gradually stirring in a figure eight motion. Once the cheese is simmering in a smooth liquid, stir in the mustard, nutmeg and paprika.
Serve with the cubed french bread and fondue fork for dipping.
